MOCK POPEYE'S RED BEANS AND RICE
ok i love popeye's red beans and rice. but at almost $5 for a large and not being able to put this truck just anywhere. I have come up with this. try it and tell me what you think.

Steps:
- 1. in large sauce pan, heat all the beans but do not boil. when well heated with masher gently mash kidney and whole pintos lightly do not over mash.
- 2. stir in one at a time, of all the spices, mixing well with wire wisk after each addition.
- 3. in six small cups fill 1/2 way with bean mixture and top with 1/4 cup of rice.serve hot.
- 4. this will make for a mildly spicy red bean and rice cup. if you like it more spicy add a little more cayenne pepper or a shot of hot sauce.
