Mixed Spiced Nuts image

1 Egg White
1 teaspoon Water
1/4 cup Sugar
1/2 -1 teaspoon Kosher Salt
3/4 teaspoon Chili Powder
3/4 teaspoon Cinnamon
3/4 teaspoon Cumin
1/2 teaspoon Caynenne
1 - 1-1/2 tablespoon Rosemary, fresh roughly chopped
3/4 cup Cashews, unsalted
3/4 cup Pecan halves, unsalted
3/4 cup Pistachios, salted
3/4 cup Walnut halves, unsalted

Steps:

  • Preheat the oven to 250 degrees
  • In a bowl, whisk the egg white and water until thick and frothy. Add the sugar, salt and spices and stir to combine.
  • Add the nuts and stir to coat with the egg white mixture
  • Using a slotted spoon, transfer the nuts to baking sheets. Bake until golden brown and crunchy, 25 to 30 minutes, stirring halfway. Cool and store in an airtight container for up to two weeks
