MIXED FRUIT MUFFINS image

Yield 18 muffins

1 c all purpose flour
1 c whole wheat flour
1-1/2 tsps baking soda
1/4 tsp salt
1 c chopped dried mixed fruit
1/2 c firmly packed brown sugar
1 (16 oz) carton plain nonfat yogurt
1/4 c vegetable oil
cooking spray

Steps:

  • Sift first 4 ingredients together into a large bowl; stir in dried fruit and brown sugar. Make a well in center of mixture. Combine yogurt and oil; add to flour mixture and stir just until the dry ingredients are moistened. Spoon batter into muffin pans coated with cooking spray, filling 2/3 full. Bake at 400 degs for 18 mins. Remove from pans immediately and let cool on wire rack.
