MINTY SUGAR SNAP PEAS image

Number Of Ingredients 9

1 1/2 lbs sugar snap peas, cleaned
salt and pepper
1/4c finely chopped mint
1 small shallot
1tsp grated zest plus 1tbs lemon juice
1tsp dijon mustard
1tsp honey
3tbs olive oil
1/4 cup crumbled goat cheese

Steps:

  • 1. Combine 4c water and 4c ice cubes in large bowl; set aside. Boil 4qt water in large pot. Add peas and 1tbs salt. Cook until crisp about 2 min. Drain peas and then transfer to ice bath to cool completely. Remove from water and pat dry with kitchen towel. Cut peas in half crosswise 2. Whisk mint, shallot, leamon zest, juice, mustard, honey, and oil in large bowl. Add peas and cheese to bowl and toss to combine. Season with salt and pepper. Serve chilled or at room temp. (can be refrigerated for one day).
