Minnesota Wild Rice Soup image

Number Of Ingredients 14

6 tablespoons unsalted butter
1 tablespoon minced yellow onion
1/2 cup all-purpose flour
3 cups low-sodium chicken broth
1 cup cooked soup-grade wild rice (1/4 cup dry equals approximately 1 cup cooked)
2 cups Rice Select Royal Blend Whole Grain Texmati Brown and Wild Rice with Soft Wheat and Rye (28 oz. plastic container available in larger markets) (3/4 cup dry rice equals approximately 2 cups cooked rice)
1/2 cup grated carrots
2 ounces diced baby bella mushrooms
1/3 cup diced ham
3 tablespoons chopped slivered almonds
1/2 teaspoon salt
1 cup half-and-half
2 tablespoons dry sherry
1 snipped fresh chives (garnish)

Steps:

  • In small saucepan, cook all rice together according to package directions ~ 45 minutes. In separate large saucepan, melt margarine; saute onion until tender. Blend in flour; gradually add broth. Cook, stirring constantly, until mixture comes to a boil; boil and stir 1 minute. Stir in cooked rice, grated carrots, diced mushrooms, diced ham, chopped slivered almonds and salt; simmer about 5 minutes. Blend in half and half and sherry; heat to serving temperature. Garnish with snipped chives.
