Mini Roasted Potatoes with Gorgonzola and Bacon image

My mini roasted potatoes make use of rich, bold flavors, like salty bacon and tangy Gorgonzola, without being too heavy.

Number Of Ingredients 7

1 Â 1/2 pounds small golden potatoes, rinsed and dried (12 to 18, depending on size)
1 Â 1/2 tablespoons extra-virgin olive oil
1 Â 1/2 teaspoons kosher salt
Sour cream
 1/2 cup crumbled Gorgonzola cheese
3 strips thick-cut bacon, cooked and finely chopped
Finely chopped chives

Steps:

  • Preheat oven to 400 degrees.Place potatoes on a baking sheet lined with aluminum foil, drizzle with olive oil and toss to coat. Sprinkle with kosher salt and toss to coat all sides. Roast potatoes in preheated oven 30 to 40 minutes or until potatoes are cooked through and slightly browned, shaking the pan once about halfway through cooking. Remove from oven and let cool.When potatoes are cool enough to handle, slice lengthwise without going all the way through. Gently squeeze to make a wider opening. Fill with small dollops of sour cream, some crumbles of Gorgonzola and a light sprinkling of bacon and chives. Serve immediately.
