Mini Morsel Shortbread Squares image

I got this recipe on a Baker's Secret cake pan insert. Looked delicious so I figure I would share it here.

Yield 4 dozen squares

Number Of Ingredients 6

1 cup butter (softened)
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
2 cups semi-sweet miniature chocolate chips, divded (you can use a 12 oz package of Nestle Toll House)

Steps:

  • Preheat oven to 350 degrees F.
  • Beat butter and sugar in a large mixer bowl until creamy.
  • Beat an egg and vanilla extract.
  • Gradually beat in flour.
  • Stir in 1 cup morsels.
  • Press onto bottom of ungreased 13x9-inch baking pan.
  • Bake for 30-33 minutes or just until top is light brown.
  • Immediately sprinkle with remaining morsels.
  • Let stand 5 minutes or until morsels are shiny, spread evenly.
  • Cool completely in pan on a wire rack.
  • Cut into squares.
