MINI CHICKEN & WAFFLES image

4 Mini Eggo Waffles
4 Chicken breast strips -
All purpose flour
2 eggs beaten
salt
pepper
oil for frying
1 cup maple syrup
1/4 cup peach preserves
2 teaspoons prepared horseradish
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt

Steps:

  • Dredge chicken strip into flour that has been seasoned with salt and pepper, then dip into the beaten egg, then back into flour. Fry until chicken is cooked. Place on paper towel to allow grease to absorb into paper towel. Mix together maple syrup, peach preserves, horseradish, salt & pepper. Set aside. Toast Eggo mini waffles and top with a chicken piece and a spoonful of Peach Mixture.
