Steps:
- Preheat oven to 350 Combine seasoning in small bowl. Makes 1/4 C. Cook bacon until crispy (about 8 min) If fat starts to smoke lower heat to med. Remove bacon with slotted spoon and set aside. Add onions to skillet and cook until golden (about 5 min.) Add peppers, celery, bay leaves and 2 T seasoning mix and cook, stirring and scraping occasionally about 4 min. Add remaining seasoning mix and cook, stirring often about 5 min. Remove from heat and discard bay leaves. Combine tomato juice, evap. milk and cooked bacon in large bowl. Add cooked vegetables and blend mix. Gently add meat, eggs, cracker crumbs in another large bowl. Add vegetable mixture and gently incorporate everything together without packing mixture. Spray 9 x 13 pan with cooking spray. Turn meat into pan and mold into loaf. Bake at 350 for 30 min. Turn pan around and bake another 15 in. Cut into 3/4 inch slices.
