When my oven was broken, I looked for recipes I could microwave. I didn't think brownies would work, because baked goods tend to dry out in the microwave, or so I thought. 1 stick unsalted butter
3 oz unsweetened baking chocolate
2 large eggs
1 c white sugar or raw sugar
1/2 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 c chocolate chips or chunks
1/2 c roasted nuts, chopped (optional)
cooking spray or pan coating

Steps:

  • 1. Put the butter and chocolate into a microwave safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds, to melt the chocolate. Set aside to cool slightly.
  • 2. In another bowl, whisk together the eggs and sugar. I used raw sugar when I made this, but regular white granulated sugar will also work.
  • 3. In a large bowl, stir the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine.
  • 4. Spray an 8 x 8 x 2-inch microwave safe glass dish with cooking spray or coat with pan coating. Pour the batter into the pan, spread it out evenly, and scatter the chocolate chunks (and nuts if used) on top.
  • 5. Microwave on high power for 5 minutes. Remove from the oven and let rest for 5 minutes before cutting and eating.
