I had a small pork roast and wanted to do something different with it. So, I started adding a few things to my crockpot and came up with this.You can use this as a filling for burritos,tacos, chimichangas, or even put it on a hamburger bun. Number Of Ingredients 6

1 1/2 lb boneless pork roast
1/2 c each of red and green pepper, diced
1/3 c finely chopped celery
1/2 c finely chopped sweet onion
1 tsp ground cumin
1/2 tsp each of seasoning salt and garlic powder,( feel free to add more garlic powder)

Steps:

  • 1. Place the roast in a 2 quart crockpot
  • 2. Add rest ingredients over meat
  • 3. Cook for 6 hours on low, remove meat and shred.
  • 4. Return meat to pot and stir to mix in the juices and cook for one more hour.
