Mexican Street Corn image

Number Of Ingredients 6

5 ears Corn on the Cob
1/2 cup Sour Cream
6 tablespoons Freshly-Squeezed Lime Juice
1/2 teaspoon Cayenne Pepper
1/4 cup Cotija Cheese (crumbled or finely grated)
1 tablespoon Fresh Chopped Cilantro

Steps:

  • Pull the husks back off the kernels, leaving them attached for easier handling.
  • Grill over medium heat for 2-3 minutes each side (total of 15 minutes) until slightly charred.
  • Let cool, then cut the kernels off the cobs.
  • Place a saucepan on medium heat and mix the corn, sour cream, lime juice, and cayenne.
  • Warm for 5 minutes. Add cilantro and cheese just before serving.
