Thick challah bread slices filled with onion, red and green bell pepper and cheddar cheese for a spicy Mexican inspired grilled cheese.

Steps:
- Mix hot sauce, red onion, red and green bell peppers, garlic, carrotand cheddar cheese. Place grape seed oil in a sauce pan and top with mixture above. On a low heat allow cheese to start to melt. Then slice challah bread into 1 inch slices. Pour cheese mixture on one slice of bread and top it with other piece to form a sandwich. Grill until those lovely grill lines are formed, about 20 seconds. Top with chopped chives.
