I made this recipe and it instantly became a family favorite! I can relate the flavors and taste to home made enchiladas. Always looking for ways to create new Meat Loaf recipe I came across substituted chopped corn tortillas and then made a few other ingredient changes to give it more Mexican flavor. 1 red bell pepper, chopped
1 medium shallots, minced or 3 small
1/2 onions, vidalia, peeled, chopped
3 clove garlic, minced
1 Tbsp vegetable oil
1 lb ground beef (kobe beef)
1 lb italian sausage, hot
1 c blue corn tortillas, finely chopped
1 c mexican cheese blend, divided or lots of cheese
1 c green salsa
2 large egg
1 pkg taco seasoning mix
2 1/4 tsp pepper
16 dash(es) hot pepper sauce

Steps:

  • 1. Heat oven to 350°F. Cook bell pepper, shallots and garlic in oil in medium skillet over medium heat 6 minutes or until tender. Cool.
  • 2. Brake up Blue corn chips by placing a plastic bag then have your kids have fun
  • 3. Gently combine onion & bell pepper mixture, eggs and all remaining ingredients half of the cheese in large bowl. mix well
  • 4. cut bacon in half and add to bottom of pans
  • 5. Place in 8x4-inch loaf pan or use the 1 pound trays ; bake 55 to 60 minutes or until internal temperature reaches 160°F.
  • 6. Sprinkle with remaining 1/2 cup cheese during last 5 minutes. Let stand 10 minutes before slicing.
  • 7. Can also top with sour cream and avocado or a Guacamole just be creative. Server with re-fried beans.
