Mexican Lasagna image

This one I got from another Weight Watcher and I love it. My kids ask for it all the time. Easy and yummy too!

Number Of Ingredients 12

1 pound(s) lean ground beef or turkey
1 can(s) 16oz fat free refried beans
2 teaspoon(s) dried oregano
1 teaspoon(s) ground cumin
2 cup(s) water
2 cup(s) reduced fat sour cream
1 can(s) 2 1/4 sliced olives - drained
1 cup(s) shredded reduce fat cheese
1/4 cup(s) thinly sliced green onions
16 ounce(s) jar of salsa
3/4 teaspoon(s) garlic powder
9 - uncooked lasagne noodles

Steps:

  • In a non-stick skillet, cook beef and drain. Add spices and beans. Heat through completely. Coat a baking dish with cooking spray ( 9x13 ) Place 3 noodles in dish and cover with 1/2 the meat and bean mixture. Repeat layers. Top with noodles.
  • Combine salsa and water mix together. Pour this mixture over the noodles. Cover and Bake 350 degrees for 60 - 70 minutes or until noodles are tender. Spread with sour cream. Sprinkle with olives, cheese and green onions. Cool slighly before serving.
  • 341 cal. 13 grams of fat and 4 fiber. 7 points per serving. Enjoy
