0.906 pound diced tomato
1/2 cup chopped yellow onion
3 to 4 cloves garlic, split in half
1 tablespoon chili powder
1 teaspoon ground cumin
1 1/2 teaspoons sugar
8 chicken drumsticks, skin removed
1 tablespoon lime juice
1/4 teaspoon salt

Steps:

  • 1. In a medium mixing bowl, combine tomatoes, onion, garlic, chili powder, cumin, and sugar and set aside.2. Heat a Dutch oven over high heat. Add chicken and tomato mixture. Bring to a boil, reduce heat, cover tightly, and simmer 45 minutes or until chicken begins to fall off the bone. 3. Place chicken in shallow serving bowl. Add lime juice and salt to tomato mixture and stir, then spoon over chicken.
