Mexican Cornbread image

Another one of my moma's yummy recipes! Our whole family loves it!

Number Of Ingredients 10

3 c cornmeal mix
1/2 c self-rising flour
1 medium onion, chopped
1 bell pepper, chopped
2-4 oz jar pimentos
2-4 jalapeno peppers, chopped
16 oz container sour cream
15 oz can creamed corn
1 Tbsp cooking oil
1 c shredded cheddar cheese

Steps:

  • 1. Pre-heat oven to 450 degrees.
  • 2. Coat a 10-12 inch iron skillet with shortening.
  • 3. In large bowl, mix all ingredients EXCEPT for cheese.
  • 4. Put half of mixture in iron skillet & sprinke cheese, being careful not to let the cheese touch the side of the skillet.
  • 5. Top with remaining mixture, covering cheese completely.
  • 6. Bake in pre-heated oven for 30-40 minutes or until done.
