Mexican Corn Bread image

I got this recipe from one of DH's family member's cookbook. It sound weird, but was easy and tasted great. I used a 4 ounce can of chopped green chilis instead of the green bell pepper, egg substitute and low fat cottage cheese and low fat sharp cheese.

Number Of Ingredients 8

1 cup cottage cheese
1 cup sharp cheddar cheese, shredded
2 cups self-rising cornmeal
1 cup creamed corn
1 onion, minced
1 large green bell pepper, finely chopped
2 eggs
1/3 cup vegetable oil

Steps:

  • Preheat oven to 350 degrees.
  • Spray 11x7 pan with cooking spray.
  • In a large bowl mix all ingredients together until well mixed.
  • Pour into prepared pan.
  • Bake for 1 hour.
  • Serve warm with butter.
