MEXICAN CABBAGE SALAD image

1/2 head white cabbage, shredded
1-2 pickled jalapeño peppers, diced
2 tomatoes, diced
1/2 large (or one small) red onion, sliced thinly
1/4 cup chopped cilantro
Juice of 3 limes
4 tablespoons pickled jalapeño juice or vinegar
1/2 teaspoon ground pepper (or more to taste,
lots of pepper is important)
1/2 teaspoon salt (or more to taste)
1 clove garlic, minced (optional)

Steps:

  • Combine all ingredients and refrigerate for at least 1/2 hour, 2 hours is best. Adjust seasonings to taste (add more salt, pepper or cilantro). The longer you let it marinate, the limper and more flavorful it will get. This keeps, refrigerated, for about 2 days.
