Mexican Bubble Pizza image

This is so easy and quick - great for a quick weeknight dinner. My kids love it and there are NEVER leftovers!

Number Of Ingredients 12

1 1/2 lb lean ground beef
1 pkg taco seasoning
3/4 c water
1 can(s) tomato soup
1 can(s) refrigerated buttermilk biscuits
2 c shredded cheddar cheese
2 c shredded lettuce
2 tomatoes, chopped
1 c salsa, chunky
1 small can sliced olives, drained
8 oz sour cream
3 green onions, sliced

Steps:

  • 1. Heat oven to 375F.
  • 2. Brown ground beef in large skillet over medium-high heat until thoroughly cooked; drain.
  • 3. Add taco seasoning, water and soup; mix well.
  • 4. Bring to a boil. Reduce heat to low and simmer for 3 minutes. Remove from heat.
  • 5. Cut each biscuit into 8 pieces. Add pieces to ground beef mixture; stir gently.
  • 6. Spoon mixture into 13x9 pan.
  • 7. Bake for 18-23 minutes until sauce is bubbly and biscuits are golden brown.
  • 8. Remove from oven. Sprinkle with cheese.
  • 9. Return to oven and bake an additional 8-10 minutes until cheese is melted.
  • 10. Cut into squares. Top with lettuce, tomato, salsa, olives, sour cream and onions.
