Mediterranean Couscous Salad image

This delicious Mediterranean Couscous Salad combines couscous with cucumber, red onion, tomatoes, garbanzo beans, Kalamata Olives, and feta cheese all drizzled with an easy three ingredient lemon vinaigrette. I love to serve it for a light summer lunch or dinner. This simple salad is the perfect accompaniment for Grilled Marinated Chicken, Lemon Pepper Baked Cod or Garlic Lemon Butter Seared Scallops. My husband and I enjoy this salad on a frequent basis.

10 ounce(s) uncooked instant couscous
1/4 cup(s) olive oil
1 tablespoon(s) white wine vinegar
1 lemon juiced
1-2 tablespoon(s) honey
1/4 teaspoon(s) fresh ground black pepper
2/3 cup(s) chopped english cucumber
1/3 cup(s) chopped red onion
2/3 cup(s) quartered grape tomatoes
2/3 cup(s) garbanzo beans
1/2 cup(s) sliced kalamata olives
1/4 cup(s) crumbled feta cheese
1/4 cup(s) loosely packed basil ribbons

Steps:

  • Cook the couscous according to package instructions and let it cool.
  • In a small bowl whisk together the olive oil, white wine vinegar, lemon juice, honey, and pepper.
  • Combine the cooled couscous, cucumber, red onion, grape tomatoes, garbanzo beans, Kalamata Olives, Feta Cheese, and basil ribbons. Drizzle with the lemon vinaigrette and toss to coat.
