Tabasco Jelly image

This recipe is based on one from Jude W. Theriot's book, La Meilleure De la Lousiane (The Best of Louisiana). My DH and I purchased this brilliant cookbook at the Pirates of the Caribbean gift shop at Disneyland. This recipe is credited to Bunkie Chamber of Commerce, Bunkie, Louisiana.

Yield 4 cups

Number Of Ingredients 7

3 cups sugar
1 cup water
1/3 cup lemon juice
4 -6 tablespoons Tabasco sauce
1/3 cup liquid pectin
1 tablespoon liquid pectin
red food coloring, for desired color

Steps:

  • Bring first four ingredients to a boil over medium high heat in a medium iron pot. Add both pectin measures and let the mixture come to a boil again. While boiling stir constantly for 1 minute. Add the food coloring to make it prettier and pour the jelly into prepared jelly glasses and seal. Cool and store in the refrigerator.
