Meatless Collard Greens image

This recipe will not disappoint those used to eating greens cooked with meat. A different taste but just as good

3 bunch collard greens
1 medium onion
1/2 bell pepper (green or red)
1 can(s) diced tomatoes
2 tsp garlic powder
3 bullion cubes
1/4 c olive or vegetable oil
2 tsp bay seasoning
dash curry powder (optional)
1 1/2 c water

Steps:

  • 1. saute chopped onion and bell pepper in oil, garlic, a dash of curry powder, and bay seasoning and stir.
  • 2. Add tomatoes and 1-1/2 cups water bring to boil and let simmer while cleaning and cutting greens.
  • 3. wash greens well. Remove thick part of stem, lay out flat roll them and then slice across.
  • 4. Add cut greens to boiling (soup) cover and simmer for about 45 minutes until tender.
  • 5. Serve with white rice and cornbread
