Steps:
- 1. saute chopped onion and bell pepper in oil, garlic, a dash of curry powder, and bay seasoning and stir.
- 2. Add tomatoes and 1-1/2 cups water bring to boil and let simmer while cleaning and cutting greens.
- 3. wash greens well. Remove thick part of stem, lay out flat roll them and then slice across.
- 4. Add cut greens to boiling (soup) cover and simmer for about 45 minutes until tender.
- 5. Serve with white rice and cornbread
