Meatball Stroganoff with Noodles image

MEATBALLS:
1 egg, slightly beaten
2 Tbsp ketchup
1/4 c quick-cooking oats
1 Tbsp finely chopped onion
1/2 tsp salt
1 lb ground beef
SAUCE:
2 can(s) cream of mushroom soup, undiluted
1 8-oz c sour cream
1 c milk
1 Tbsp paprika
BOILED NOODLES

Steps:

  • 1. Preheat oven to 4oo degrees. Combine egg, ketchup, oats, onion and salt. Add beef; mix well. Shape into 1-1/2 inch balls.
  • 2. Place in a greased 11-inch by 7-inch by 2-inch baking dish. Bake uncovered for 10-15 minutes.
  • 3. In a large saucepan, combine soup, sour cream, milk and paprika; heat through. Add meatballs, cover and simmer until heated through, stirring often.
  • 4. Serve over noodles that have been tossed with 1 tablespoon of butter and 1 tablespoon minced parsley.
