Steps:
- Mix the corn and the tomatoes.
- In a separate bowl, mix the eggs, vanilla, sugar and milk. Add corn tomato mixture, the dry ingredients & the cheese, reserving some cheese for the top.
- Pour into a buttered 2 quart dish & bake in a preheated 350ºF oven for 75 minutes or until set.
- Serve warm or cold.
