MASCARPONE CREAM CHEESE ICING image

1 cup (two sticks) unsalted butter at room temperature
2 cup (8 ounces) cream cheese at room temperature
2 cups powdered sugar
Pinch of salt
1 cup mascarpone cheese
1 tsp vanilla or mint extract
Crushed peppermint candy for garnish

Steps:

  • In a large bowl, beat the butter, cream cheese, powdered sugar and salt on medium high speed until light and fluffy. Beat in the mascarpone on very low speed until just combined. Stir in the extract. Frost the top of each cupcake with the frosting. Sprinkle the crushed pepperment candy evenly on the cupcakes.
