Steps:
- Marinate pork overnight. Pat dry, place in pot with water, salt & lard. Bring to a boil, reduce heat to low and simmer uncovered until all water boils away, about 30-45 minutes. Lightly brown pork until crispy. Add onion slices and saute until still crunchy. Serve with lime wedges.
