MARINATED PORK TENDERLOIN WITH MUSTARD SAUCE image

Marinade:
1/4 cup soy sauce
1/4 cup bourbon
2 tablespoons brown sugar
3 pounds pork tenderloin
For Mustard Sauce:
1/3 cup sour cream
1/3 cup mayonnaise
1/2 cup dijon mustard
1 tablespoon finely chopped scallions
1-1/2 teaspoons rice or cider vinegar
salt

Steps:

  • For marinade: In a bowl, combine soy sauce, bourbon and brown sugar. Set pork tenderloin in a shallow pan, pour in marinade, and marinate at room temperature for 2 hours, turning occasionally. Heat oven to 325 degrees F. Remove pork from marinade and transfer to baking sheet. Bake, basting frequently with marinde, for 1 hour, or until tender. For mustrad sauce: In a bowl, combine sour cream, mayonnaise, mustard, scallions, vinegar and salt to taste; blend well. Serve cold or slightly heated. Cut tenderloin on the diagonal into thin slices. Serve with mustard sauce
