Marinated Fruit Salad image

This tropical fruit salad with pineapple, persimmons, kiwi, apple, and grapes is marinated in orange marmalade and juice.

1 ripe pineapple - peeled, cored, and cut into chunks
3 kiwis, peeled and cut into 1/4-inch-thick slices
1 cup seedless grapes
1 green apple, cored and chopped
2 Fuyu persimmons, peeled and thinly sliced
¾ cup pineapple-orange-banana juice
½ cup orange marmalade
2 teaspoons grated fresh ginger
2 bananas

Steps:

  • Combine pineapple, kiwis, grapes, apple, and persimmons in a large serving bowl.
  • Stir together pineapple-orange-banana juice, marmalade, and ginger in a small bowl. Pour over fruit and toss to combine. Cover and refrigerate for 2 to 6 hours.
  • Slice bananas. Remove fruit salad from refrigerator and add bananas; toss gently to combine.
