Marinated Feta Cheese image

Great to keep on hand in the refrigerator for a quick fix when someone stops over. Just serve on hot toasted French bread with a little of the oil from the jar. Marinated feta is also nice added to a pasta or lettuce salad.

Number Of Ingredients 8

3/4 pound(s) feta cheese
2 clove(s) garlic
1/2 teaspoon(s) mixed peppercorns
8 - coriander seeds
1 - bay leaf
- fresh oregano, thyme and rosemary sprigs
- olive oil, extra virgin, to cover
- french bread toasted to serve

Steps:

  • With a sharp knife cut feta into cubes. Cut garlic into thick slivers.
  • With a mortar and pestle, lightly crush peppercorns and coriander seeds.
  • Into a jar with a tight-fitting lid, pack feta cubes with the bay leaf, interspersing layers of cheese with garlic, peppercorns and sprigs of fresh herb.
  • Pour in enough olive oil to cover cheese. Cover and refrigerate 2 weeks.
  • Serve on hot toast sprinkled with a little of the oil from the jar.
