2 pounds carrots, sliced thinly and cooked
1/2 cup chopped onion
3/4 cup sugar
1/3 cup oil
2/3 cup vinegar
1 teaspoon salt
1 teaspoon pepper
snipped fresh parsley

Steps:

  • Mix up everything in the dressing, add the carrots, and add the parsley. Let stand overnight.
