Marinade for Chicken on the Grill from Savannah image

This marinade is enough for 12 pieces of chicken. Recipe is taken from "Savannah Style" a cookbook published by the Jr. League there in 1980. You marinate the chicken pieces, then cook them in a pan on the grill, turning frequently, then remove from pan and place chicken pieces directly on grill for about 10 minutes. Original recipe used in addition 2 1/2 tsp salt, but I think this would be salty enough from the soy sauce, Cooking time is marinating time.

1 1/2 cups oil
3/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons dry mustard
1 tablespoon pepper
1/2 cup wine vinegar
1 1/2 teaspoons parsley flakes
1/2 cup lemon juice
2 tablespoons sugar

Steps:

  • Combine all of the ingredients, stirring well.
  • Pour over the chicken pieces & let stand in refrigerator overnight.
  • Cook on grill as directed above.
