Maple Syrup Layer Cake image

Maple syrup gives this cake a wonderfully different flavor. Frost with a maple butter cream icing or a cream cheese icing or a Cool Whip frosting.

2 1/2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup butter, softened
1/2 cup sugar
2 large eggs
1 cup pure maple syrup
2 teaspoons vanilla
1/2 cup hot water
1 cup finely chopped walnuts (optional)

Steps:

  • Cream butter and sugar well. Add in eggs, one at a time, beating well after each addition.
  • Blend in maple syrup and vanilla.
  • Gradually add sifted dry ingredients by thirds, alternately with the hot water; and ending with dry ingredients. Gently stir in walnuts.
  • Pour into 2- 8 inch greased and floured layer pans.
  • Bake at 350 degrees for 30-35 minutes.
  • Cool on wire rack for 10 minutes. Remove layers and cool completely on wire racks.
  • Frost.
