3/4 cup real maple syrup
1/4 cup water
2 egg whites
1 teaspoon lemon juice
1/2 cup whipping cream, whipped to very soft peaks

Steps:

  • Boil maple syrup and water in saucepan to 228F on the candy thermometer.
  • Beat egg whites until stiff.
  • Add syrup gradually, beating constantly with the egg beater.
  • Add the lemon juice.
  • Fold in the whipped cream.
