MAPLE SOUR CREAM COFFEE CAKE image

Yield 8 large pieces or up to 16 small slices

Ingredients:
1/2 cup butter (room temp.)
1 cup white sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
2 cups all-purpose flour
1 tsp. each baking powder and soda
1/2 tsp. salt
Topping:
1/2 cup chopped walnuts or pecans
1/2 cup brown sugar
1/4 cup melted butter
1/4 cup maple syrup
2 tsp cinnamon, 1 tsp nutmeg

Steps:

  • Cream together butter and sugar till fluffy. Beat in eggs then sour cream and vanilla. In separate bowl stir together flour, baking powder and soda and salt. Stir into creamed mixture. For the topping stir all ingredients together in a small bowl and mix well. Grease an angel food pan well with butter. Pour half of batter mixture into pan and smooth out surface. Using a tablespoon drop dollops of topping mix over batter till half of topping is used. Pour remaining batter over mix and top with dollops of remaining topping. Bake in a pre-heated oven at 350F for 50 to 60 minutes, check with a toothpick.
