Steps:
- Mix pumpkin with next 5 dry ingredients with an electric mixer.
- Add cream and maple syrup. Mix until blended.
- Mix in beaten eggs.
- Pour into 9 inch pie shell and bake for 15 minutes at 425F. Lower heat to 350F and bake until almost firm, about 30 minutes more.
- While the pie is baking, mix remaining ingredients together with your fingers until crumbly.
- Remove pie from oven. Add streusel to the top of the pie, covering completely.
- Return pie to over and back until filling is just a bit wobbly in the middle and streusel is golden, about 10 to 15 minutes.
