Maple Pumpkin Pie with Pecan Streusel image

2 cups pumpkin puree
2 tablespoons flour
1/3 cup dark brown sugar, packed
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/4 cup heavy cream
1 cup maple syrup
3 eggs, beaten
3/4 cup pecans, toasted and chopped
1/4 cup dark brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
2 tablespoons unsalted butter, diced

Steps:

  • Mix pumpkin with next 5 dry ingredients with an electric mixer.
  • Add cream and maple syrup. Mix until blended.
  • Mix in beaten eggs.
  • Pour into 9 inch pie shell and bake for 15 minutes at 425F. Lower heat to 350F and bake until almost firm, about 30 minutes more.
  • While the pie is baking, mix remaining ingredients together with your fingers until crumbly.
  • Remove pie from oven. Add streusel to the top of the pie, covering completely.
  • Return pie to over and back until filling is just a bit wobbly in the middle and streusel is golden, about 10 to 15 minutes.
