Steps:
- Pre heat broiler. Line the broiler pan with foil and coat the foil with cooking spray. Sprinkle the salmon with the salt and pepper and place skin side down on the prepared pan. Broil the fish for 4 minutes, turn and broil another 4 minutes. Mean while, in a small bowl whisk together the mustard, maple syrup and vinegar. Tun the salmon again so it's skin side down and brush the surface liberally with the maple syrup mixture. Broil another 2 minutes or until the top is golden and bubbly, and the fish is cooked to the desired degree of doneness.
