MAPLE-GLAZED PORK CHOPS WITH ROASTED CORN RELISH image

6 T maple syrup
2 T balsamic vinegar
Freshly ground black pepper
4 thick-sliced smoked pork chops

Steps:

  • 1. Combine the maple syrup and vinegar in a small saucepan and bring to a gentle simmer over medium-high heat. Simmer until reduced by half and just thick enough to coat the back of a spoon, about 5 minutes. Season with several grindings of pepper and set aside. 2. Preheat the grill to medium-high. When ready to cook, oil the grill rack. 3. Brush the glaze generously over both sides of the pork chops, and grill until lightly charred and warmed through, 3-4 minutes per side. Arrange the chops over a bed of the warm corn relish and serve immediately.
