MANGO QUESADILLAS image

Number Of Ingredients 6

1 ripe mango
1/4 Red onion, chopped
1/8 cup cilantro
Shredded Pepper-Jack Cheese
4 Flour Tortillas
1 teaspoon Olive oil

Steps:

  • Cut mango in slices. Add olive oil to sauce pan and warm on low-medium heat. Add 1 tortilla. On top of tortilla, place slices of mango, cheese, red onion, and cilantro. Cover with 1 tortilla. Warm until cheese starts to melt and tortilla on bottom starts to turn golden brown. Flip quesadilla and warm other tortilla until it begins to turn golden brown. Remove from heat and serve.
