Mango-Orange Salsita image

This salsa tops Mango Glazed Salmon and it also makes a great dip with tortilla chips.

Number Of Ingredients 12

6 1/2 cup(s) red onion, chopped
1 1/4 cup(s) olive oil
1 1/4 cup(s) red wine vinegar
5 cup(s) fresh squeezed orange juice
2 1/2 teaspoon(s) salt
1 1/4 teaspoon(s) black pepper
2 1/2 cup(s) mandarin orange
5 cup(s) mango, diced
3 3/4 cup(s) cilantro, chopped
20 medium hass avocados, pitted, peeled, diced
1 1/4 tablespoon(s) fresh lime juice
1 1/4 tablespoon(s) fresh orange juice

Steps:

  • Chop all ingredients until they have a 1/4-inch dice.
  • Place all ingredients except the avocado into a mixing bowl and mix evenly.
  • Fold in the diced avocado, making sure the avocado stays intact. Serve over mango-glazed salmon or enjoy as a snack
