MANGO-BLUEBERRY SALSA image

1 cup fresh mango (ripe, but firm) coarsely chopped
1 cup fresh blueberries, washed
2 serrano chiles, seeds and ribs removed and finely minced
1/2 cup red onions, chopped
1/2 cup red bell pepper, chopped
1/2 cup fresh cilantro, chopped
1/4 cup seasoned rice vinegar
1/4 teaspoon ground black pepper

Steps:

  • 1. Prepare at least 1 hour prior to serving. 2. In a nonreactive bowl, mix all ingredients except the blueberries. 3. Add blueberries to the mix and carefully turn in with a spatula to complete mixing. Take care not to break the blueberry skins. 4. Refrigerate until 1 hour prior to use.
