MANGO BANANA MUFFINS image

Yield about 12 muffins

Number Of Ingredients 12

1 cups all-purpose flour
1/4 cup rolled oats
1/2 cup sugar
1 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 eggs, lightly beaten
1/3 cup vegetable oil
1/2 tablespoon lime juice
1 1/4 cups diced ripe mango
1 medium ripe banana, mashed

Steps:

  • In a large bowl, combine the dry ingredients. In another bowl, combine the eggs, oil and lime juice; add to the dry ingredients just until moistened. Stir in the banana, then fold in the mango pieces. Fill sprayed muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
