Steps:
- Combine almonds and sugar in a heavy saucepan; cook over medium heat, stirring constantly, until golden. Pour onto wax paper, and cool. Break into pieces, and store in an airtight container. To make dressing, combine oil, sugar, vinegar, salt, pepper, and hot sauce. Chill. Stir well before serving. Combine lettuce, celery, onions, and oranges; cover and chill up to 3 hours if desired. Just before serving, toss with dressing and sprinkle with caramelized almonds.
