1 can black-eyed peas, drained and rinsed
1 can black beans, drained and rinsed
1 can (12 to 15 ounces) corn kernels, drained and rinsed
½ jar Robert's Reserve Roasted Red Pepper & Onion Dip
½ cup finely chopped red onion
¼ cup chopped fresh cilantro
4 ounces feta cheese, crumbled

Steps:

  • 1. Drain and rinse black-eyed peas, beans and corn. Place in a large mixing bowl. Stir in Roasted Red Pepper & Onion dip, onion and cilantro. Cover and refrigerate at least 30 minutes to allow flavors to mingle. 2. Toss with feta cheese right before serving. Serve with tortilla chips or toasted pita wedges. -------------
