LOW FAT ZUCCHINI BREAD image

Number Of Ingredients 14

3 cups flour
1 cup sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp allspice
3 large eggs
1/3 cup canola or other oil
2/3 c unsweetened applesauce
3 cups grated zucchini (drained)
1 tsp vanilla extract
1/2 cup chopped walnuts, optional

Steps:

  • Preheat oven to 350. Prepare two loaf pans. In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, cinnamon, cloves and allspice and mix well. In a medium-sized bowl, lightly beat eggs with a fork. Add the oil, applesauce, zucchini and vanilla. Stir together, then add to the flour mixture, and stir just until blended. Do not over mix. (If using, add walnuts. They should be folded in last. Pour the mixture into prepared pans. Bake 50 to 60 minutes, until toothpick comes put clean. Cool in pan on rack fir 10 minutes. Remove loaves from pans and cool completely before slicing.
