Low Carb Kahlua image

I got this recipe years ago when I was doing the Atkins Diet, but lost it. I was overjoyed to find it again. It's quick and easy, and delicious!

Yield 32 1 1/2 oz. shots

Number Of Ingredients 5

2 1/2 cups water
3 cups sugar substitute (like Splenda)
3 tablespoons instant coffee crystals
1 teaspoon vanilla
750 ml vodka

Steps:

  • In a large pitcher or measuring cup combine water, sugar substitute, coffee crystals, and vanilla. Stir until all dry ingredients are completely dissolved.
  • Pour through funnel into a 1.5 - 2 liter bottle (I use an empty wine bottle; just be sure to save the cork, or use a screw-top bottle). Add the entire bottle of vodka. Cork, then shake well.
  • You can drink it immediately, but it gets better if you can stand to let the flavors marry overnight.
