Loretta Lynn's Homemade Peach Cake image

As you can tell by the name, this recipe came from a cook book written by the great country singer Loretta Lynn. This is a very dense cake. Her recipe also came with a recipe for a homemade frosting, which we didnt make..I used canned frosting..Loretta, forgive me...lol

Time 50m

Number Of Ingredients 12

29 oz canned sliced peaches
2 large eggs
2 c self rising flour
1 tsp cinnamon
1 tsp vanilla
1 tsp baking soda
1/2 can(s) peach juice
1 stick butter, softened
TO MAKE SELF RISING FLOUR: PER CUP
1 c flour
1 1/2 tsp baking powder
1/8 tsp salt

Steps:

  • 1. Preheat oven to 350 degrees. Grease a thirteen by nine inch baking pan. Drain the peaches, reserving half the syrup for later. Chop the peaches.
  • 2. In a medium mixing bowl beat the eggs until light. Add the flour, cinnamon, baking soda, peaches, reserved juice, and butter and beat until well blended. Pour into the prepared pan and bake for 35 to forty minutes.
  • 3. let cool on a wire rack and then frost with white frosting. This can be homemade or store bought frosting...your choice. I have added how to make self rising flour, because I do not keep it in my house as I very rarely use it.
