I modified a salmon loaf recipe to fit the lo-carb lifestyle. I made it salmon patties so that it wouild be more manageable for one or two people. I have linked it to my Italian Baked Asparagus recipe since I have them pictured together.

Steps:
- 1. Drain salmon and reserve liquid. Clean salmon.
- 2. Add egg.
- 3. Add salmon liquid.
- 4. Process Pork Rinds in Food Processor to make crumbs. Add to mixture.
- 5. Add lemon juice, onion, parsley and salt and pepper.
- 6. Stir mixture, adding heavy whipping cream if mixture is too dry toform into patties.
- 7. Form into patties and fry in olive oil at a medium to medium low heat until golden brown.
- 8. Serve with lemon wedges.
