Lite Greek Pasta Salad image

I make things really, really simple in the summer months. I mean....who wants to cook in all that heat (and I have AC!!) This is a very simple salad....not heavy in the dressing department, but with a nice clean lemony taste. I serve this with a grilled meat or fish and fresh fruit for dessert. Freshly cooked tuna, prawns or cooked chicken can be added for a more substantial meal

Number Of Ingredients 13

3 cups bow tie pasta, uncooked (or any other pasta)
1 1/2 cups cucumbers, chopped
3/4 cup feta cheese, crumbled
1/4 cup red onion, coarsely chopped
1/4 cup kalamata olive, sliced
12 cherry tomatoes, halved
1/4 teaspoon black pepper, freshly ground
1/4 cup fresh lemon juice
1 1/2 tablespoons olive oil
2 -4 garlic, minced
1 teaspoon dried oregano
1/4 teaspoon black pepper, freshly ground
1/8 teaspoon salt

Steps:

  • In a pot of boiling water, cook pasta. Drain and rinse under cold water. Drain; place in a large bowl.
  • While pasta is cooking. Chop up the cucumber, feta cheese, red onion, olives and cherry tomatoes. Add the pepper.
  • Dressing: In a small jar with lid, combine lemon juice, olive oil, garlic, oregano, salt and pepper. Shake well to incorporate.
  • Add to salad and combine. Chill for 2 hours.
