LINGUINE WITH PROSCIUTTO & OLIVES image

Number Of Ingredients 7

8 oz dry linguine, cooked & drained
1/4 C olive oil
3 oz thinly sliced prosciutto, cut into 1/4" wide strips
1/2 C thinly sliced green onions
3 oz jar pimiento-stuffed olives, drained and cut in half horizontally
1 C cherry tomatoes, halved
1/2 - 2/3 C freshly grated or shaved parmesan cheese

Steps:

  • Heat oil in med skillet over med-high heat. Add prosciutto and cook, stirring often, until lightly browned (3-4 min). Add onions and stir until they begin to soften. Add olives and tomatoes; shake pan often until olives are hot (about 2 min). Pour over linguine; mix lightly. Serve with parmesan.
